This take on a vesper martini or white negroni is lighter and more aromatic than the traditional drink, making it an ideal aperitif, especially as the nights start to draw in. It’s a brilliant example of how even a few clever tweaks can evolve a classic cocktail into something completely new and interesting.
Alpine vesper
Serves 1
25ml vodka – we use Konik’s Tail
25ml dry vermouth – we use Noilly Prat
25ml Luxardo Bianco bitter
2 dashes Italian amaro – I like Braulio for its herby alpine notes
1 green olive, to garnish
Measure all the liquids into a mixing glass filled with ice, stir to chill and dilute, then strain into a coupette and garnish with the olive.
